I have often wished that there were more Apps that would work with my Librem5. I recently found an app to make websites look more like apps. It’s called Webapps and creates icons on your phone so you can view Websites as if they were apps. After all, many apps are just wrappers for websites. In the absence of more apps designed to function with linux based phones it’s the next best thing. The only drawback is that it uses Firefox, which is extremely slow on the Librem5 and I often have to use the keyboard to enter F11 to hide the browser menu.
If there are specific apps that you are missing, it may help to mention them here.

I’d like to see something like an Uber or Lyft app that would integrate my location data so that a driver could see my location.
I’m really not complaining though because I have noticed lots of improvements in the function of my Librem5 over the past year.

Part of that would depend on whether those companies have made public the specification of what the online interface looks like between the passenger app and the company’s server or, failing that, whether someone has reverse-engineered it.
(There is of course also an interface between the driver app and the company’s server but that is presumably out of scope here.)
