3 Canadian YouTubers (Veritasium, Linus Tech Tips, Hacksmith) demonstrate SS7 vulnerability with the help of security researchers that allows anyone to intercept SMS, calls, and locate you, all without your knowledge.
It’s a decent video, well made but naturally kept superficial, particularly for those that want an overview of the problem.
For context, SS7 is the network protocol behind global phone infrastructure and its problems are not really something that can be answered with in handsets at device level (not including using alternative networks, of course, like with encrypted data based communications), unless you count (HW switch) killing your phone modem.

Reliable Wi-Fi calling on the OS can facilitate using calls and SMS/RCS on Wi-Fi, which could at least allow you to use Wi-Fi only in airplane mode (or with the Librem 5, switch off the modem) if you use a traditional cell service instead of a VOIP and cellular Internet plan.
