In case anyone else is having any trouble with this as well, I was able to get Flatpaks to respect dark mode on my LIbrem 5 following the directions in this post:

Or, you can use these two commands on Byzantium without needing to create or install anything.
If you are on Crimson, you only need the first line as the Settings app has an option to set dark as your preferred interface.
