I’d love to buy a Linux tablet, but it would need to contain a build-in modem for internet connectivity.
Any chance the Librem11 could be extended (an external adapter is not acceptable for me) or will be available with e.g. the modem of the Librem5?

Anyway, although it’s referred to another Librem product, Librem 5, here an interesting thread that could be useful for you:
(tl; dr: *It is possible to upgrade Librem5 to 5G by using an alternative modem, Sim8202G. At the moment it requires Mobian - potentially it is possible with other up to date OSs as well. It’s not quite perfect but better than the old setup. *)

You should provide that as feedback direct to Purism.
I believe the intention is that if the Librem 11 needs internet when out and about, it should tether to the Librem 5 via WiFi (although you should be able to tether it via WiFi to just about any smartphone).

Slightly off topic: I would like to see GNSS (GPS) on the Librem11 as well.

Well if you are tethered to the Librem 5, you should be able to get that from the Librem 5 too.
