When I open Camera (Dev) there are very few places I can point the camera where the Balance “aA” doesn’t flutter between “aA” and "Af11 without having to manually adjust each setting?

The fluttering is the automatic setting trying to find balance. It sounds like normal behavior for camera. Touching the values and taking manual command stops that, if you want.

You push the round button for picture. The app doesn’t change between image and video modes, it just has two buttons next to each other.
As I noted elsewhere, you may want to check your sound settings (source is set to “Handset - Built-in-audio” from sound settings) and the resulting video that it records sound.
