What is on top of Debian that make PureOS special? Why should I use it over Debian?

Depends on what you do with it, as always.
I run both, side by side, and the stock options for PureOS are more convenient for office workers/people that mostly browse. Debian requires more effort in initial set-up, and there seems to be a bug where the laptop won’t lock (just go to sleep) when closing the lid. However, support for packages is greater and installing games on it it easier.
If you don’t intend on gaming or customizing your OS (apart from downloading a new browser), I’d suggest just keep using PureOS, given that it is more visually refined and has some nice features built into it (icons packs, a traybar, etc.).
