Element, which utilizes the Matrix protocol.

There are more options than this depending on your threat model, but this is the most well-known alternative solution.

There are also other Matrix clients such as Fractal and nheko.

I would also recommend Dino for XMPP (Jabber). Here is a topic about it:

I have been able to make and receive encrypted calls using Dino for a while. But recently the call button has disappeared, and I also can’t seem to receive calls. I’m using the version installed fom the OS package manager, rather than the flatpak.
